Beverly Boulevard, 1936. Dave Chasen opened an eight-stool chili stand. Sixty years later, when the doors finally closed, he had served every president from FDR to Reagan, every movie star worth knowing, and one dish he made famous on three continents. We're bringing the room back.
1936 — 1995
The original.
Dave Chasen ran a vaudeville-stage chili joint that became the most powerful corner table in Hollywood. Sinatra, Bogart, Bacall, Hitchcock, Reagan — all regulars. The Hobo Steak was carved tableside. The shortcakes came on a silver cart. Liz Taylor had the chili flown to the set of Cleopatra in Rome, frozen in dry ice.
When the doors closed for the last time on April 1, 1995, the world lost one of the great American restaurants.
2027
The revival.
Birch & Chatton Hospitality Group is opening Chasen's in Channelside, Tampa — not as a museum, but as a working restaurant. The Hobo Steak. The chili recipe. The shortcakes. The dessert cart. The signatures that earned the original its sixty-year run.
Around them, a contemporary American steakhouse: Greater Omaha dry-aged beef, a Florida Gulf raw bar, a beef bacon program (house-cured, never pork), an award-winning cocktail program by Zachary Debs, and a Michelin-trained head chef joining the kitchen in July 2027.
We are not nostalgic. We are bringing back a room that earned its legend, and putting modern cooking inside it.
